Food Pairings for Cask 23 Estate Cabernet Sauvignon
Cream of the crop in the Stag's Leap District. The staff at Stag's Leap set up a blind tasting of Cask 23, SLV, Fay, and Artemis for both my wife and me. We each independently ranked them the same, and in that order. No doubt Cask 23 was the superior bottle. Bold and full-bodied, yet balanced. Tannins could mellow a bit, but given a few years in the cellar it should be wonderful.

Winemaker Notes - Our Cabernet Sauvignons from 2007 are remarkably fruit-forward and generous in their youth, yet remain true to the house style, with refinement, elegance and long cellaring potential. The 2007 CASK 23 offers continuously unfolding aromas of violets, cassis, whole and crushed blackberries, oak spice, dark cocoa, cedar and subtle cigar box. It s intense, yet still vibrant and fresh, with concentrated flavors which build through the finish and linger after each sip. Silky texture and refined tannins complete the portrait. Serve CASK 23 with braised beef cheeks or crown roast of lamb.

A classic example of tremendous power and great finesse. The wine presents a symphony of aromas from sweet black fruit to cigar box, from savory spices of clove, allspice and licorice to dried herbs and flowers, even a touch of minerality. This complexity carries over to the palate with flavors that are reminiscent of spiced chutney, ending with supple tannins and an extraordinarily long finish. It's a wine sure to enhance any dining experience.

"The flagship wine, the 2007 Cask 23 Estate is primarily Cabernet Sauvignon and production is usually between 1,500-1,600 cases. Displaying finesse, power and measured restraint, this deep dark plum/purple-tinged 2007 reveals notes of black currants, Asian spices, sweet plums, Christmas fruitcake and cedar. This medium to full-bodied, delicate but substantial beauty should be consumed over the next 12-15 years. Dramatic improvements are clearly underway at Stag’s Leap Wine Cellars, which was sold to a consortium led by Tuscany’s Piero Antinori in 2007. Antinori brought in well-known consultant Renzo Cotarella to improve the quality and, hopefully, get this winery back to the lofty heights it achieved in the seventies and early eighties. They seem to be well on their way, which is good news for consumers. This is a large estate of 104 acres, all situated as one giant block of vineyards in the southern part of the Stags Leap appellation. The change in ownership and winemaking staff shows progressive improvement with each vintage starting with 2007. The 2009s look to be their best wines to date. As for the 2007 reds, normally four cuvees are produced, all based on Cabernet Sauvignon, including the Cask 23, which comes from the best lots from the Fay and S.L.V. estate vineyards after fermentations are completed.
