Carpineto Chianti 2001
Manually harvested through careful vineyard selection in late September. Fermentation and maceration took place at 25-30°C using indigenous yeasts over 15 days. Frequent aerations, pump-overs, and punch-downs were performed during this time. Malolactic fermentation occurred. Aged for 12 months in new French and American oak barrels, followed by 1 month in stainless steel tanks where the wine settled. Bottled unfiltered to preserve the integrity of the wine. The bottles were stored in the temperature-controlled cellar for an additional 5 years before being released.
Food Pairings for Carpineto Chianti
A bold wine with intense blackberry and licorice aromas accented by black pepper and vanilla nuances. Concentrated flavors of luscious red fruit and spice flood the palate. Full-bodied with well-integrated, supple tannins and a long, persistent finish.
