Ever since 1868, the year in which renowned enologist Antonio Carpenè founded the Company, the name Carpenè Malvolti has represented the story of sparkling wine making in Italy. Carpenè Malvolti has been the first winery in Italy to perfect the use of the Charmat Method for the production of high-quality sparkling wines. For four generations, the Carpenè family has worked together with carefully selected vine growers to produce the very best from the hillsides of the Veneto and of Conegliano in particular, in order to guarantee absolutely top quality throughout the Carpenè Malvolti product range. Viognier is a native grape from the Rhone Valley. Carpene Malvolti is the first company to make a sparkling wine from this grape variety. Grapes: 100% Viognier Soil: Dry, poor and shingly Winemaking: Soft pressing to obtain just the free-run juice. Fermentation takes place in temperature controlled stainless steel tanks with the addition of carefully selected yeasts. When fermentation comes to an end, the wine undergoes a number of rackings before being stored sur lie. The wine is turned into a sparkling wine by using the Charmat method. Serve: At 8 to 10C as an aperitif or to accompany salmon mousse, fresh pasta and white meats Tasting Notes: Pale brassy yellow with a persistent perlage. Bright bouquet, with rich citric accents minled with greenish notes and hints of savory heather, apricots and sage. On the palate it is bright, with deft minerality supported by clean, fresh creaminess from the sparkle.
