In 1868, Antonio Carpenè, founder of Italy’s first oenology school, began producing Prosecco using the Charmat method of fermentation in large vats instead of the bottle, which became the standard practice for quality Prosecco. The grapes are sourced from the steep hillsides of Conegliano, where Prosecco is given the prestigious DOCG designation. In addition to its range of fine Proseccos, Carpenè Malvolti also produces the “L’arte Spumantistica” range of sparkling wines from other grapes in a range of styles from dry to sweet whites and rosé. For four generations, the Carpenè family has worked together with carefully selected vine growers to produce the very best from the hillsides of the Veneto and of Conegliano in particular in order to guarantee absolutely top quality throughout the Carpenè Malvolti product range. From a blend of two grape varieties cultivated in this region Pinot Nero and the indigenous Raboso which, as early as in 1881, Antonio Carpenè indicated as an important and indeed aristocratic cultivar of the Treviso area comes Carpenés new cuvee, Rosé Carpenè Brut. Grapes: 85% Pinot Noir & 15% Raboso Soil: Pinot Nero: A French clone, cultivated between the Piave and Livenza Rivers on clay soils veined with caranto, a particular type of limestone that accentuates the wines floral perfumes and its tangy, savoury qualities on the palate.Raboso: Cultivated in the vicinity of the River Piave on stony alluvial soils. Winemaking: Pinot Nero: Soft pressing in order to obtain just the free-run juice. Fermentation takes place with the aid of very carefully selected yeasts. After this has been completed, and following a number of rackings, the wine is stored on its lees.Raboso: The grapes are picked in the Gellisaia vineyard and are then dried on racks. The must ferments on the skins and after fermentation, the wine goes into oak casks for a brief period of time Blending: The wines are blended and then transformed into a sparkling wine using the Charmat Method. Serve: At 8 to 10C to accompany seafood risottos, richly flavoured fish such as salmon, trout and eel, white meats and goats cheese. Notes: Deep pink with hints of crimson, the wine has a perfumed floral bouquet, with elegant yet intense notes of wild berries and Morello cherries. It is full, tangy with rounded fruit on the palate.
