Carmen Shiraz 2003

Winemaker's Notes:

85 % Syrah 15 % Cabernet Sauvignon The grapes come from estate vineyards in the Maipo Valley. Some vines grow in flat plots, with a medium textured soil, and others are located in slopes in the foot hills of the Andes Range with a stony soil. Normally we have very sunny days (26º - 28ºC) and cool nights (8º - 10º C) during the ripening period, accompanied by very low humidity and free of rainfall, allowing the grapes to grow and ripen very healthy. The grapes were hand harvested and carefully selected prior the crushing. Afterwards the fruit was crushed and stayed in a cold skin contact for 15 days. Alcoholic fermentation took place between 25º- 27 ºC in stainless steel tanks. 70% of the wine was racked into new and 1 year old French (50%) and American (50%) oak barrels, and 30% of the wine remained in tanks, where malolactic fermentation occurred naturally. After 10 months of aging, we fined and bottled without filtration. The wine aged for additional 6 months prior to its release. An attractive deep bright raspberry colour followed by a beautiful wine that opens with lovely violets, jammy cherry fruit, mocha and spicy aromas. The fruit on the palate has a tremendous persistence, a rich base of juicy black plums and wild black cherries mixed with lovely caramel and toasty notes. Dense and concentrated, with smooth and silky tannins that persist through the finish. Alcohol Content 14.6% Vol. Total Acidity 2.99 g/l Sugar 2.99 g/l PH 3.73 Enjoy with red spicy meats, seasoned dishes and strongly flavoured cheeses.
