The grapes were collected by hand, and were strictly selected before crushing, only 7% of the grapes come from old Chardonnay's vines of the Maipo Valley. These grapes help the Carmen winery to support structure and length in the blend. The intense tropical fruit, aromas of limes and mineral tones are reflected by the rest of the grapes, which come from the Casablanca Valley, a cool grape growing area. 45% of the must was fermented in French oak barrels, while the remaining 55% fermented directly in stainless steel tanks. Viña Carmen was founded in 1850 by Christian Lanz, who named the winery in honour to his beloved wife Carmen. More than a century later, in 1987, the Claro Group acquired the brand to take it into a new direction. In 1992 a new winery was built and new vineyards were planted, to produce the best quality wines from Chile, and export them worldwide. Carmen has been recognised for its quality and for being a pioneer in the Chilean wine industry. Additionally the winery has been the lead producer of wines from organically grown grapes through its Nativa brand.The grapes for our Gran Reserva Chardonnay come from old vineyards in Casablanca yielding 7ton/ha. The vines grow on sandy soils which are directly influenced by the fresh sea breeze of the Pacific Ocean. The slow ripening ensures perfect acid retention and ideal alcohol balance. The Gran Reserva Chardonnay displays ripe peach with pastry cream, almonds, pain grille and carmelized pears, cloves and vanilla on the nose. On the palate it is rich and long. A very tasty and balanced wine, perfect for pork chops, smoked ham, roasted duck or goose, fish terrine, quail, grilled and smoked salmon, richly sauced lobster, pasta with cream sauce, oyster stew, roasted peppers and cream - based soups.
