Saslove Winery is a family boutique winery founded in 1998 by Barry Saslove, who is among the leading wine educators and one of the first boutique winemakers in Israel. Barry Saslove, a Canadian computer engineer, left his career in comuters to follow his passion, wine. Barry wrote the book “Introduction to the World of Wine”, which has become a best seller, taught thousands wine tasting and appreciation and helped establish many boutique wineries in Israel. In 1998 Saslove Winery was established in Kibbutz Eyal and in 2007 another facility in the Upper Galilee near the vineyards. The vineyards are organicaly maintained by Saslove’s own viticulturist and are located on the upper Galilee mountain range, 800 meters above sea level. The basalt, terra rosa and limestone soil, combined with cool, dry mountain breezes are ideal for the cultivation of choice wine grapes. Barry Saslove and his daughter Roni Saslove follow the winemaking from vineyard to bottle. The grapes are hand harvested at the break of dawn. The fermentation is done at various temperatures for maximum extraction of flavours. All of the red wines are aged in French and American oak, which add exotic spiciness and complexity to the wine.
