All Carabella wines are sourced from our 58 acre site in Oregon's Chehalem Mountains. We produce estate pinot noir, chardonnay and pinot gris. The vines are planted to a southeast slope with an altitude of 500 to 600 feet. Gravelly volcanic soils--Nekia, Saum and Jory--have proven perfect for dry-farming our low-yielding vines. We aim for complexity by using blending components from the many distinctly different blocks within the site. There are seven different pinot noir clones, two blocks of Dijon 76 chardonnay and two different pinot gris clones. All wines from the Carabella label are made by winemaker Mike Hallock. Other fine wineries in the North Willamette Valley purchase Carabella fruit as well. Read less
Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.
