Food Pairings for Cantina Terre del Barolo Barolo
I had read that the '96 Barolo from Terre Del Barolo was a big disappointment from an American who bought this for more than a 100 $. So I decided to open it with no expectations. I was pleasantly surprised that this wine held its own and constantly developed over the dinner. Color: Brownish Orange (typical) Nose: After an hour and a half of decanting noticeable black fruits, leather and spices. As it opened up I got strong truffle, forest floor and tobacco. Continued to evolve showing slight tar and dill. So much fun to experience this evolution! Palate: Medium-Full bodied, soft tannins, weakened but still decent structure. Slightly slightly slightly acetic. Great experience trying one of my barolos from my "young" cellar. Probably not the best barolo in the world but was pretty damn good for me! Can't wait to continue the quest! Was an AMAZING pair with fresh porcini mushroom risotto, with risotto cooked with fresh sage and bay leaves.
