Winemaker's Notes:

Deep honey in colour with flashes of gold betraying its history. The esters of sun-dried figs, plum conserve and nuts are impressed in the aroma. Burnt caramel and vanilla pervade the mouth while a delicate sweetness edged by citrus rind lingers in the throat. Served at 8o-10oC to accompany nuts, fruitcakes, conserves and chocolate morsels, or as a simple aperitif.

Vinsanto of Santorini. (Vinsanto originated from Greece). A mythical wine. Vinsanto Canava Roussos. The mythical appellation for a wine holding within it well-hidden secrets passed from generation to generation for 170 years. It originates from the renowned Asyrtiko, Athiri, Aidani varieties leisurely dried on Santorini terraces and cooled in the halo of the Aegean. Their precious juice is fermented in subterranean galleries, with only the mute play of underground shadows as company. And after long ageing in oaken barrels, it transforms into a most unique flavour, with an exceptional fragrance and its cherished colour. The taste is enchanting, with the nose of grapes and dried fig, delightful aromatic fragrance, beautiful deep colour of honey with flashes of gold, embracing each other to grace us on this wonderful journey to the legends of the volcano. A delicacy. A delight. A pleasure beyond words. Best enjoyed cooled. 10˚C, with fruits and nuts or just by itself.
