Food Pairings for Caliterra Tributo Sauvignon Blanc
Caliterra was established in 1996 as a joint venture between the families of Robert Mondavi and Viña Errazuriz. In January 2004 Viña Errazuriz became the sole owners of Caliterra, at the heart of which is the impressive 1000ha Caliterra Estate. The name Caliterra is taken from 'Calidad' spanish for quality and 'Tierra' - land. The wine making philosophy of Caliterra is to produce environmentaly friendly quality wines in the heart of the Colchagua Valley. The focus is around the 1000ha Caliterra estate in Colchagua where 242ha are currently under vine. Crucially a large proportion of this estate, and all new plantings, are on prime hillside sites resulting in high quality fruit and complex wines. Caliterra as a truly International brand, the focus has been on developing export markets as the basis for supporting growth. Today, Caliterra is sold in 50 countries on five continents. This year the grapes were harvested one week before the date of harvest 2008 and in two opportunities, with one week difference. The concept was to count with a higher aroma spectrum in order to play with at the moment of making the final blend. The first lot reaffirms the citric and herb aromas, the second lot contributes with fruit notes such as green apples and nectarines, characteristic from mild zones. The fruit was harvested very early in the morning and transported to the winery where the must was protected from oxidation using low temperatures. This 'Tributo Sauvignon Blanc' has a very pale yellow colour and greenish highlights on the edge. Soft aromas of green asparagus, lemon and tangerines, complemented with mineral notes feel fantastic on the palate. A perfect ending makes freshness and elegance last for a long time.
