Revisited the Cakebread 2007 Cabernet Sauvignon tonight and might be backing off my initial impressions. Was actually really nice on the first sip, it definitely doesn't lack for healthy acidity. However, it didn't pair very well with the meal (lamb burger, shoestring fries, etc). Makes me think it's not as Bordeaux-like as I thought. The fruit also became a little cloying, unnatural in a way. No more than an average-medium finish. I'll have to revisit once more to get better clarity, could've been a bad bottle as I was very impressed the first time sampling this wine a few weeks ago.

This was a nice Cabernet, but was not spectacular. @ this price, you expect spectacular. Had a second bottle, decanted and opened up very, very nicely. This was much better than the first sample I had. All at the tasting agreed this was the quintessential Napa Cab.

I knew from the first sip that I would list this Cab as one of my favorites. I enjoy Red wines but sometimes they can be to heavy for me. I think that's why I enjoyed this one so much.

A blend of 87% Cabernet Sauvignon,6% Merlot, 4% Cabernet Franc, 2% Petit Verdot and 1% Malbec aged 20 months in French oak barrels, 50% new. For this 2007 Napa Valley Cabernet Sauvignon, 95% of the fruit came from our up-valley vineyards with 5% from the Carneros district. Robert Parker scored this Cab 92 points and said "The 2007 Cabernet Sauvignon is among the finest “regular” Cabernet Sauvignons I have tasted from Cakebread. It exhibits a dense ruby/purple color, stunning purity, subtle notes of smoke, black currants, blackberries, spring flowers and toast, good acidity and ripe tannin. This full-bodied yet graceful, deep, silky Cabernet Sauvignon is already irresistible, but it will provide provocative and complex drinking for 15-20 years." Limited!

Rich Napa Cab. Intense and spicy, a delightfully vibrant and complex wine with pure currant, black cherry and blackberry fruit that's enlivened by firm tannins and acidity. Best from 2003 through 2012.

Slim and attractive, this is a naked model of a Cabernet, all bones, but lovely, round bones, plumping with air toward a rounder, voluptuous red and black currant fruit. While it builds in richness, it holds to the elegance, the clean lines, the soft austerity. Decant a bottle now for roasted veal sausages, or put it away for a while and let the full roundness take hold.

Everything about this big, chewy Cabernet tastes expensive, especially the burled oak scents and flavors that introduce it and then last through the finish. The fruit is super-ripe, offering its meaty weight to the tannins, which are also considerable. A dense and showy Cabernet for a steakhouse, or for a cigar after dinner.

This wine feels lean at first, a cocoa-scented cabernet with umami flavors of roast mushrooms to balance its dark fig notes. With air, the warm fruit saturates the gentle and chewy tannin. To decant for sirloin smothered in wild mushrooms.

Smooth, ripe and plush, with excellent balance to the cdeary currant, anise and nutmeg scents. Firm and concentrated, with ripe, integrated tannins that will benefit from short-term cellaring. Best from 2007 through 2013.
