Cakebread Cab 2007
Wine Tasting Notes Cakebread's Napa Valley Cabernet Sauvignon is clear, dark garnet in color with complex, spicy, cedar-like scents and background aromas of cassis and dark berries. On the palate, the texture is rich and smooth with flavors reminiscent of cassis with a hint of chocolate set in a structure of balanced fruit and tannin. These flavors are confirmed on the finish, which is marked by rich, ripe fruit and discreet impressions of oak and spice.

Revisited the Cakebread 2007 Cabernet Sauvignon tonight and might be backing off my initial impressions. Was actually really nice on the first sip, it definitely doesn't lack for healthy acidity. However, it didn't pair very well with the meal (lamb burger, shoestring fries, etc). Makes me think it's not as Bordeaux-like as I thought. The fruit also became a little cloying, unnatural in a way. No more than an average-medium finish. I'll have to revisit once more to get better clarity, could've been a bad bottle as I was very impressed the first time sampling this wine a few weeks ago.
Nice and smooth but a little light on the strength. $72
This was a nice Cabernet, but was not spectacular. @ this price, you expect spectacular. Had a second bottle, decanted and opened up very, very nicely. This was much better than the first sample I had. All at the tasting agreed this was the quintessential Napa Cab.
Great Cab from a great vintage. 2007 Truely is a benchmark year for Napa.
I knew from the first sip that I would list this Cab as one of my favorites. I enjoy Red wines but sometimes they can be to heavy for me. I think that's why I enjoyed this one so much.
Perfect, balanced, juicy cab. Enjoying with peppercorn steak.

Cakebread Cellars Cabernet Sauvignon 2007. After crushing and cold-soaking the grapes for 24-36 hours to enhance extraction, the juice from each vineyard lot was fermented separately in temperature-controlled stainless steel tanks, at warm temperatures, to fully extract color and flavor. Fermentation completed in approximately seven days, but the wines macerated on the skins for an additional three weeks to maximize color and flavor extraction and enhance tannins. The free run juice from each lot was then drained and transferred to French oak barrels, 35% new, for aging. In Spring, 2006, the lots chosen for our Napa Valley California, bottling were blended and subsequently aged an additional 14 months in barrel before bottling in July, 2007. This wine is good to drink at any time.

The 2007 Cabernet Sauvignon is among the finest ldquo;regularrdquo; Cabernet Sauvignons I have tasted from Cakebread. It exhibits a dense ruby/purple color, stunning purity, subtle notes of smoke, black currants, blackberries, spring flowers and toast, good acidity and ripe tannins. This full-bodied yet graceful, deep, silky Cabernet Sauvignon is already irresistible, but it will provide provocative and complex drinking for 15ndash;20 years. This benchmark winery has again turned out some impressive wines.
Fresh, fruit-forward aromas of black currant, blackberry and boysenberry, joined by chocolate and roast coffee scents. Beautifully structured on the palate, it boasts concentrated, dark berry and cassis flavors balanced by supple, well-knit tannins and a long, flavorful finish.
