Paul Hobbs Winery sprouted from the passion of one man: Paul Hobbs. Paul wasn’t satisfied just becoming Head Enologist of Robert Mondavi’s Opus One in 1981, or becoming Vice-President/Winemaker of Simi Winery in 1989. No, he wanted to create his very own grapes, on his own land. This passion led to the creation of Paul Hobbs Winery in 1991. Focused in the Russian River Valley, each harvest is meticulously captured so as to extract the very best from each grape. This passion started with only three wines in the winery’s repertoire: Chardonnay, Pinot Noir, and Cabernet Sauvignon, but the winery quickly grew to produce over a dozen wines. Today, Paul Hobbs still consults other wineries around the globe, including wineries in Chile, Argentina, and Hungary. Read less

The nose showed sweet raspberry jam, incense, mocha and spice. On the palate, a burst of intense concentration submitted to a wave of balanced, mouth watering acidity as flavors of sour cherry, sweet jam and herbs washed across the senses. The finish was long but fresh and left me aching for another sip. This was a beautiful and rich California cabernet that shows remarkable value for what's in the bottle. I will buy it again.

This full-bodied cab will spoil you and bring black currant, licorice and spices to mind with every sip. A bit tight but will open up with time. Hard to beat at almost any price.

One of my favorite Cabs. Smooth, full bodied and great with steak.

Notes: This stately cabernet sauvignon displays great depth and complexity from diverse terroirs, including fruit from our Nathan Coombs Estate and other pedigreed Napa Valley vineyards. Dark crimson in color, the nose is perfumed with luxuriant aromas of red currant, boysenberry, cedar box, and Herbes de Provence. The intensely layered palate excites with flavors of cassis, graphite, blueberries, and sage, woven seamlessly together with savory, velvety tannins. The finish is long and pure, a perfect harmony of richness and elegance. Varietal Composition: 92% Cabernet Sauvignon 6% Cabernet Franc 2% Petit Verdot

Vineyard: * Properties: State Lane, Beckstoffer Dr. Crane, Beckstoffer Las Piedras, Stagecoach, Flat Rock, Broken Rock, Wombats , Nathan Coombs Estate * Clonal Selection: 4, 7, 337 * Sites: Various sites and exposures; various soils * Yield: avg. 3.8 tons/acre Growing Season: * Summary: The 2012 growing season has been described by many as “textbook perfect”. Temperate summer days moderated plant growth, contributing to smaller cluster and berry size during lag phase, leading to increased concentration of flavors. An idyllic Indian summer finished the maturation process, producing fruit with exceptional character and intensity. * Harvest Date: October 17th–29th * Harvest Brix: 25.5 Winemaking: * Hand-harvested, picked at night * Hand-sorted while still cold from the field * Fermented in small, closed top, stainless steel tanks with indigenous yeasts * 5-day cold soak, 29 days total maceration * Gentle pumpovers and delestage * Aged 20 months in French Oak barrels; 57 % new * Coopers: Taransaud, Darnajou, Marcel Cadet, Radoux, Baron, Boutes, Marques, Sylvain * Spontaneous malolactic fermentation in barrels * Varietal Composition: 97% cabernet sauvignon, 2% Cabernet Franc, 1% Petit Verdot * Unfined and unfiltered; bottled June 2014 Notes: * This stately cabernet sauvignon derives great depth from the diverse terroirs of its pedigreed vineyards, including Beckstoffer Dr. Crane, Beckstoffer Las Piedras and Stagecoach. The wine is dark garnet in color with brooding aromas of blackberry and cassis. A juicy palate reveals complex layers of black fruits and baking spice with mineral traces of pencil lead and slate. Youthful acidity backed with chewy, brambly tannins creates a well-balanced 30 second finish. - Winery * Alcohol 14.7% ** Only 2 in Stock **

The 2012 Cabernet Sauvignon jumps from the glass with dark red plum, raspberry, spice and new leather. This succulent, mid-weight wine is an excellent choice for drinking now and over the next few years. The racy, exuberant finish and plump fruit are among the signatures of the year, and they are both very much present in this fine Cabernet.

The 2012 Cabernet Sauvignon with the Paul Hobbs moniker is pretty serious wine that could easily win many a tasting. Dense purple in color, with notes of blackcurrants, blackberry, charcoal and incense, the wine is full-bodied, opulent and a big-time winner. This is a stunner that’s drinking well already and yet promises to age well for 15–20 years.
