Diamond Series Cabernet Sauvignon 2011 - 85 points, Wine Enthusiast / Earthy aromas of black-currant leaf and crushed carnation dominate the profile of this wine, with light black-fruit notes taking second place. Lean and delicate, this wine is ready for drinking now; pair it with wine-braised brisket. Kosher.

Dating back to 1865, the 568-acre Intriga property in Chile’s Maipo Valley is planted entirely with Cabernet Sauvignon vines ranging in age from 10 to 50 years. Alberto Antonini, one of Italy’s premier consulting winemakers, works closely with Intriga winemaker Cristian Correa on crafting this very limited production Cabernet Sauvignon. Intriga belongs to a carefully nurtured collection of vineyard properties in Chile’s premier wine regions, arising from an alliance between brothers Hernan and Eduardo Gras and their winemaking partner, Cristian Hartwig, owners of Vina MontGras in Colchagua Valley. Production Area Maipo Valley, Chile Grape Varieties 100% Cabernet Sauvignon Vinification Grapes were hand-picked during the third week in April and cold-soaked for 4 days. The juice underwent temperature-controlled fermentation with frequent pumping over, and was in contact with the skins for a total of 22 days. The resulting wine was aged in a combination of French (70%) and American (30%) oak for a period of 14 months. 75% of the barrels were new, 25% second use. Color Deep ruby with purple notes Bouquet Ripe currant and cassis with a touch of bittersweet chocolate, mint and elegant vanilla Taste Rich and powerful, with ripe, juicy tannins that give this wine an elegant texture Alcohol 14.6% Serving Suggestions Delicious with steak, grilled red meats and hearty pasta dishes.

Behind the Petit Bistro range, which playfully evokes the legendary allure of Gallic romance and joie de vivre, are six compelling wines, a Chardonnay, Rosé, Merlot, Pinot Noir, Cabernet and Syrah. All originate in vineyards nestled between the Mediterranean and the foothills of the Massif Central in the Languedoc region of southern France. Thanks to the emergence of a small but growing cadre of innovative wines such as Petit Bistro, made in an unabashedly modern, New World style, the Languedoc is starting to develop a reputation as the “New Old World” of international winemaking. Production Area From the Languedoc region of southwest France, an area highly conducive to production of fine quality grapes. Thanks to the introduction of progressive, new, more rigorous vineyard management techniques in the past 20 years by innovative growers, the Languedoc is sometimes hailed as “the California of France.” Grape Varieties 100% Cabernet Sauvignon, the chief grape of the Medoc region of Bordeaux. This late-ripening variety with small, dark berries results in complex wines of intensity and structure. The warm climate of the Languedoc produces an excellent balance between restrained acidity and ripe fruit flavors. Vinification Following harvest grapes are de-stemmed prior to a 24-hour maceration to facilitate color extraction. Fermentation is conducted under controlled temperatures 4-6 days to enhance natural fruit flavors and a firm edge of tannin. The wine is then matured for several months in stainless steel vats prior to bottling and release. Situated on a high plateau in the Uco Valley of Argentina’s Mendoza region, the El Portillo (meaning “portal” or “gateway”) winery and vineyards are dedicated to making superb quality wines for everyday enjoyment. Harmony with nature is readily apparent in every aspect of this property, which is designed to deliver wines that capture and respect the pristine beauty of their birthplace. El Portillo’s state-of-the-art winery is largely built of local materials, including stones quarried from a nearby valley. This enables the facility to better blend in with the surrounding environment. Built on three levels, each 16 feet deep, with much of the facility concealed below ground, El Portillo is also notable for its employment of a gravity-flow system. This minimizes handling of grapes and helps protect the integrity of the fruit. The facility’s ingenious design, which takes careful advantage of the gentle slopes on which it is built, is thought to be unique in South America. Production Area This cabernet sauvignon was made entirely from hand-harvested grapes from select plots on our vineyard estate Finca El Portillo, located at 3,610 feet above sea level. Soils are alluvial, atop a gravel bed with good permeability and drainage. Grape Varieties 100% Cabernet Sauvignon Vinification The grapes were hand-harvested at the optimum ripening point, approximately 24° brix. After gentle de-stemming and selection, the berries were placed in stainless steel tanks, where fermentation and maceration with select yeasts took place at 75°F to 77°F for 10 to 15 days, to preserve the fruity character of the variety. After fermentation, the wine was racked by gravity into stainless steel tanks, avoiding the need to pump. Color Ruby red Bouquet Dark fruits emboldened by red and black pepper create an invitingly fruit-forward nose Taste On the palate, the fruit is lush and fully developed, bringing the wine into perfect balance.
