Burlotto Barolo 2004

Winemaker's Notes:

He makes four Barolos. The common thread in all these wines is surreal texture and pristine aromatics.

Our wines are created in an ancient structure, which surrounds an interior garden. Fermentation takes place in a wide area with huge windows, in barrels of French Oak which of 50 to 70 hectoliters and the temperature of the musts can be controlled. In the adjacent area, steels containers are used for the lactic fermentation and for the last phase of aging wines. The aging is done in two brick vaulted cellars: one is only partly underground which has thermal variations particularly adapted for stabilizing the wines, housing the wines to be consumed when young (Pelaverga, Dolcetto and Barbera.), the other cellar is totally underground and has 80% humidity with a constant temperature, used for the delicate phase of aging in wooden caskets for the most important wines like our Barolo. After bottling, the wines complete the aging process and the bottles are piled for settling, before labeling and packaging. Read less
Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

At first this offered up some simple light cherry in alcohol and sweet earth tones but air caused this to gain a touch of a raw/terpene note. In the mouth this was delicate yet drying with a decidedly savory and spicy character that was a bit chewy and tough with a long, mineral tinged finish. Air did not move this much though it did gain quite a clear strawberry tone to the fruit. It never really seemed to come together and remained uninspiring 85pts

15 days maceration in tini, temperature controlled if needed, Malolactic fermentation in Stainless followed by about 30 months in botti. Opens with a whiff of tar, which is followed by very pure fruit notes and a strong balsam edge that highlights the herbal qualities of the nose. Fine open rose notes emerge but then the aromatics draw back a bit. Fresh and crisp with great tannins framing the medium weight here, really fine balance, precise. Dark fruits but still feeling very fresh, perhaps a bit closed but very pure expression of Nebbiolo with red fruits, rose petals, green herb and slight menthol tones that lead to a cleansing precise finish. The wine is consistent from nose to finish but feels a bit folded in on itself. Seemingly a textbook base Barolo but in need of3- 5 years in the cellar. 90pts
