Perfumes of leather, plum, blueberry, black raspberry, licorice, pepper, mineral, toasty oak and spice mingle on the nose, rearranging over time. Plum, blackberry, black cherry, licorice and leather open on the palate, which evolves away from highlights of spice to a background of toasty oak during the first hour. Ripe fruit and strong black pepper run through sweet leathery flavors as the complex layering of tastes evolves, smoothing out after an hour supported by fine tannins and restrained alcohol, allowing savory succulent fruit to linger on a plush finish. At two hours, astringency begins to steal the finish. Hops and barley, then raisins, pungent cherry and cave minerals emerge at three hours, adding even more interest and complexity.
