Food Pairings for Buena Vista Pinot Noir Carneros
After hand harvesting and destemming, each lot was cold soaked for three to five days to maximize color and flavor extraction. 100% of fermentation took place in open-top tanks to broaden the texture and add to the complexity of the wine. After an average of 14 days on skins, the wine was aged in 31% new French oak, with the balance in 1-3 year old barrels, for 8 months. The wine has aromas of red cherry, spicy clove and anise, with earth and mushroom. In the back it exudes violet and subtle vanilla toast. This 2003 Pinot Noir Reserve exhibits flavors of rich raspberry, cherry with hints of shitake mushroom and mocha. The finish is long carried by supple tannins and lingering red berry fruits, indicative of Carneros Pinot Noir.
