Food Pairings for Buena Vista Merlot Carneros
The grapes were handpicked between August 23 and September 17, 2004. The fruit was hand sorted on a gentle belt system and fermented in small open top fermentors. After hand harvesting and destemming, each lot was cold soaked for three to five days to maximize color and flavor extraction. 100% of fermentation took place in open-top tanks to broaden the texture and complexity of the wine. After an average of 14 days on skins, the wine was aged in 33% new French oak, with the balance in 1-3 year old barrels, for 8 months. The wine has aromas of red cherry, nutmeg and morel mushroom, while in the back it exudes well integrated chocolate and toast. This 2004 Pinot Noir Carneros exhibits flavors of rich blackberry, cherry, mocha and spice. The mid palate is rich leading to a long finish carried by supple tannins and lingering red berry fruits, all trademarks of Carneros Pinot Noir.
