Food Pairings for Buena Vista Merlot Carneros
In 1999 our Carneros Merlot was handpicked at an average of 24° Brix. After destemming, the fruit was transferred to tanks, left to cold soak for three days, then inoculated and allowed to ferment for an additional week. A gentle pressing was applied before the wine was transferred to new and one-to six-year-old American (80%) and French oak barrels for a period of 22 months. This Merlot is an impressive example of Carneros fruit and a testament to what a truly wonderful growing region it is for all Bordeaux grape varietals. The 1999 Merlot Carneros is well balanced, full-bodied and packed with flavors of pomegranate and chocolate. The wine has many layers that unfold with each sip. Its round, smooth tannins lend promise to great aging potential.
