What to Expect

Cabenet Sauvignon: Originally of French origins, this versatile grape produces exceptional wines around the globe. It's usually medium to full bodied with a fine structure that supports black and red fruit flavors with typical notes of olive, chili and herbs that add complexity.

Winemakers Notes

Bryant's opaque black/purple-colored Cabernets are fermented with wild yeast and bottled without any clarification techniques such as filtration. They also receive a pre-fermentation five day cold maceration, This technique is used by consultant Helen Turley for all the Cabernet Sauvignons she makes. The enormously promising, potentially perfect 1997 Cabernet Sauvignon is one of those rare wines that possesses awesome aromatic, flavor, and texture dimensions. Rating: 96/100 - As reviewed by International Wine Cellar in Issue 90, May/June 2000 Saturated deep ruby. Extraordinarily deep nose features black raspberry, black cherry, smoke and leather. Great explosive middle is at once broodingly deep and incredibly sweet, without being overly roasted: flavors of chocolate-covered cherries and maple syrup dominate. Just enough balancing acidity to give brightness to the wine. The alcohol here is nearly off the charts (in the high 15s), but the wine does not come across as hot.
