Rich aromas of pears and toast emanate from the glass of the non-vintage Champagne Brut Premiere Cuvee (disgorged September, 2004), a blend of 45% Pinot Noir, 33% Chardonnay, and 22% Pinot Meunier. Light to medium-bodied and frothy, this peppery apple-flavored sparkler is highly focused, slightly tangy, and long in the finish. Drink it over the next 3–4 years.

Since he created his company in 1981, Bruno Paillard has become an important force in Champagne, owning a number of other brands. But his top wines are made under his own name; they go for finesse and elegance. This bottling also has a touch of mature, toasty acid flavors. The bottles carry the year of disgorgement — an excellent idea.

(D5B5E1; disgorged May, 2005) Bright yellow. Intense spiced pear and ripe citrus aromas, with subtle mineral notes adding complexity. Round and juicy in the mouth, with a deep pear flavor and a suggestion of blood orange. Gentle acidity provides snap to the finish, which features a note of creamy orange.

This wine does everything right, from the fine mousse to the tight line of flavor, leaving a clean sense of refreshment that lasts. There’s a delicate scent of fennel and chestnut honey, a crisp flavor of Bosc pear, a chalkline of acidity, all coming together to strike a beautiful balance. This is blended with wines from 32 villages, each vinified separately.
