Percentage Grape: 100% Sangiovese grosso . Loc: Montalcino -località Villa Santa Restituta . Disposition : south -south west 400/480 above sea level<br/><br/>Soil: Composed mainly of elements of silicates and limestone with the presence of minerals . It has a rude structureand it is characterised by the presence of rocks .( stony soil )<br/><br/>Growing Climate: Mediterranean climate<br/><br/>Date of Harvest: September end - Beginning October<br/><br/>Type of Harvest: By hand<br/><br/>Vinification Method: Natural fermentation at a controlled temperature . Maceration in stainless stessl vats for about 20 days with daily mixing . Ageing for at least 36 months in French or Slavonian oak barrels . Then 12 months in oak casks of 225 ltrs each . Successive refinement in bottle for a mimimum period of 4 moths .<br/><br/>Alcohol Percentage: 13.5 %<br/><br/>Sugar Rate: 0-5 g/l
