The reputation of the Grands Vins fins de Bourgogne is based on two varieties alone : Pinot Noir and Chardonnay. Handsome blond, he walks into the room and looks fresh and appealing. Intelligent smile, a few sharply witty lines and a warm, infectious laugh. Something's missing though - he doesn't seem to have read all the books you'd hoped he would have, he doesn't know how to carry a conversation, and you're just a tiny bit bored after the first half hour. Probably unfairly critical because of your disappointment. He seemed like the kind of guy who'd keep you up all night.

Subdued aromas of minerals and oak, with a strong suggestion of red berries. Subtle nose combines liquid stone, citrus skin, white flowers and charred oak. At once generous and penetrating, with focused grapefruit, pineapple and stone flavors framed by harmonious fruity acidity. Very long, ripe, firm finish features repeating... Stephen Tanzer's IWC. Steely, pure aromas of apple and lime. Sweet, dense and firm but not hard, with lovely apple and spice flavors and impeccable sugar/acid balance. Very spicy and very long on the aftertaste; firm-edged but not tough or dry. Stephen Tanzer's IWC. The medium-bodied 2000 Chevalier-Montrachet La Cabotte boasts minerals spices and creamed nuts in its aromatics as well as its flavor profile. It is fresh broad layered and concentrated. This densely packed wine is ample harmonious and displays an admirably long delineated finish. Projected maturity: 2004-2012. Robert Parkers Wine Advocate.
