Bouchard Père et Fils:
Contrary to many wine growing regions, one of the particularities of Burgundy is the complete lack of the mixing of different grape varieties. There are two main varieties in Burgundy : Pinot Noir for the red wines; Chardonnay for the white wines. The reputation of the Grands Vins fins de Bourgogne is based on two varieties alone : Pinot Noir and Chardonnay. As early as 1866, Dr Jules Guyot in his book on viticulture of the centre north of France, wrote that: " the essence of the fine wines of the Côte d'Or, is the grape variety, the Pineau Noir or Noirien for the red wines; the Pineau Blanc or Chardenet for the white wines ". This may be the most complex of all the wines we tasted this evening as you expect from a Grand Cru. Scents of violet, lavender, lemon, mineral, cinnamon and ginger all made appearances at various times as I kept returning to the glass to find something new. Citrus, spice and mineral played on my tongue along with an intense acidity that needs time to mellow, yet the wine itself seemed very light on the palate. It will very definitely reward those patient enough to let it reach full maturity.

As it usually does, this offers another level of aromatic complexity with a highly spiced nose trimmed in a subtle touch of wood that does not interfere with the overall transparency of either the nose or the palate as this is pure, classy and refined. Moreover, the tannins are also more refined, which is unusual, and this completely stains the palate on the hugely long finish. Like the Bèze, this is stunningly complex with ripe, layered and unusually expressive red berry fruit aromas that are cool and airy with background notes of cassis liqueur, all trimmed in a subtle touch of wood that gives way to the explosive, powerful, and seriously concentrated big-bodied and mineral-infused flavors that possess fine detail and almost painful intensity on the reserved, firm and youthfully austere finish that is hugely long. WS 90pts. - According to the Wine Spectator: A white with a sense of place. Acacia, lemon blossom, apple and mineral aromas and flavors abound, all matched to an elegant frame. This is balanced, lingering on the long, mineral-tinged aftertaste. Drink now through 2016. Tasted twice, with consistent notes. 250 cases imported.
