Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

The medium-bodied 2000 Chevalier-Montrachet La Cabotte boasts minerals spices and creamed nuts in its aromatics as well as its flavor profile. It is fresh broad layered and concentrated. This densely packed wine is ample harmonious and displays an admirably long delineated finish. Projected maturity: 2004-2012. Robert Parkers Wine Advocate.

Winemaker's Notes:

"Don't miss!...Here the nose displays noticeable sulfur and it's enough to knock down the expressiveness of the otherwise attractively ripe and complex aromas that are compositionally similar to those of the Chevalier. The textured, concentrated and overtly muscular flavors brim with an abundance of dry extract before concluding in an explosively long, mouth coating and almost painfully intense finish. As is often the case, the 2010 La Cabotte displays characteristics of both the Montrachet and the Chevalier and this is one beautiful wine. Note that I do not expect the sulfur to be an issue as the wine ages though if you're tempted to try a bottle young it would be good to decant it first...96" BH 6/12 "Bracing aromas of lemon, pineapple and petrolly minerality; reminded me of a top Alsace riesling. The wonderfully rich, horizontal finish goes on and on. Perfectly balanced for two decades or more of positive evolution in bottle...96+" IWC 09/12
