Food Pairings for Botter Primitivo Doppio Passo Salento IGT
This wine is very good! Starts off with a faintly sweet aroma of dried fruit - which follows through when you can later taste the slightest bit of raisin. This makes sense because "doppio passo" refers to the technique used to make this wine which is done by adding grapes that were left to dry on the vine to a raisin-like state to the already-made wine, which causes a second fermentation. At first sweet to the taste, the wine quickly opens up to a more complex, fuller taste. Very soft tannins. We had this wine with fresh spaghetti with truffles and tomatoes, and it was excellent. It also tasted really good with dark chocolate after dinner. I would recommend this wine - the doppio passio process is worth it!
