Food Pairings for Borsao White
The wine is made from grapes from vineyards planted between 1975 and 1985, located on hillsides with clay soils with lots of gravel and some slate at 1,200 to 1,500 feet in elevation. The grapes are hand-harvested in late September.
A surprisingly layered version of an otherwise relatively neutral grape, Macabeo, the Borsao Blanco is loaded with citrus, along with green apples and pears. The wine is gentle, not powerful or complex, but is refreshing in the mouth and on the finish.

Notes: Stainless-steel fermentation, then aged for 3 months in French Oak
