Suggested Recipe Pairing presented by
Layered Rice Pudding

RiceSelect's fragrant Jasmati® is blended with eggs, milk and fall's favorite spices, cinnamon and nutmeg, to create a delicious rice pudding, which is layered on top of fluffy cream cheese and abuttery pecan crust. Pairs well with a bold, tawny port with flavors of dried fruits, nuts, and spices.

90 Points - International Wine CellarOrange-pink with a delicate bead. Musky orchard fruits, red berries and herbs on the nose, plus a subtle smoky quality. Tangy redcurrant and strawberry flavors are tightly wound and given a bitter touch by anise and cherry pit notes. Youthfully unyielding, with strong finishing grip and a persistent echo of cherry pit.

94 Points - Wine Spectator"A rich, smoky Champagne, with hints of marzipan and fennel seed accenting honeyed malt, bread dough, baked apple and gingersnap flavors. Its all focused by intense acidity, which meshes beautifully into the layers of flavor and refined texture, with a lingering finish. Drink now through 2021."93 Points - The Wine News"Burnished gold hue. Baked apple, peach and orange marmalade aromas. Crisp and acidic with flavors of mixed grains, apple and orange zest. Dry finish with tart peach and mineral notes."91 Points - Connoisseurs' Guide"Burnished gold hue. Baked apple, peach and orange marmalade aromas. Crisp and acidic with flavors of mixed grains, apple and orange zest. Dry finish with tart peach and mineral notes."90 Points - The Wine Advocate"The NV Brut Special Cuvee opens with elegant, well-delineated aromas of honey, brioche, roasted nuts, orange zest, flowers and peaches, of which appear on the palate in a classy, finessed expression of the house style. This is an especially refined and delicious NV Champagne. The Special Cuvee is roughly 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier (2004, 2003) sourced from a variety of vineyards. Bollinger adds 5-10% of reserve wines (in this case from 1995 and 1996, aged in magnums) which gives this offering its lovely complexity. The dosage is 7-9 grams per liter. This is Lot: 807704, disgorged towards the end of 2007. Anticipated maturity: 2008-2012."Winemaker's notes:The denomination Special Cuve was created in 1911. The idea came from William Folks, then partner of the illustrious London House of Mentzendorff. This great wine lover felt it was an insult to simply call this great wine "non vintage". The suggestion of naming it "Special Cuve" was immediately approved by Monsieur Bollinger.A blend par excellence, the Special Cuve is the purest expression of the Bollinger style; of its craftsmanship and its singular conception of what a champagne should be. It is, therefore, on this wine that the House of Bollinger shows how it is different from other Champagne Houses, asserts its qualitative policy and by which it asks to be judged.
