What to Expect

Champagne is specifically a sparkling wine made in the Champagne region of France; every other sparkling is simply that, sparkling wine. Made to be aged for a few to many years, in many languages "Champagne" is synonymous with "party". When young, Champagne exhibits the fresh fruit tones of its "cepage", or blend. Usually based on a blend the features either Chardonnay or Pinot Noir as its main ingredient, Champagne's fruit can range from citrusy to orchard fruits and even red berries. The wine gains distinct yeasty notes from its secondary fermentation, the one that adds the fizz, which is typically described as recalling brioche or bread. As it ages Champagne tends to lose its obvious fruit, which is replaced by subtle nutty tones and subdued elements of dried fruits.

Rating: 19/20 - As reviewed by Jancis Robinson This wine, 63 per cent Pinot Noir apparently, is extremely meaty and broad. This is the traditional Bollinger experience par excellent. Not to be drunk without food, I'd say. But a splendid bottle for a really carefully thought out - I have to use this word - repast. Dammit, this expansive wine is virtually smoking a cigar itself! Recommended retail price £85.

Rating: 91/100 - As reviewed by International Wine Cellar in Issue 123, November/December 2005 ($200) Light gold color. Textbook Bollinger aromas of toast, lees and buttered toast, along with suggestions of fresh mushroom and white truffle. This is really about earthy tones, not fruit. Thick and fat to the point of being oily in texture, with deeply pitched sweet cream and butter tones and a slow-to-unfold singed pineapple flavor. For fans of Bollinger, this is a serious buy. To be completely different requires remaining true to oneself and ones traditions... It is in this spirit that Bollinger has developed a unique champagne: R.D. or Recently Disgorged. The blend is the same as that of Grande Annee and the R.D. uniqueness lies in its much longer ageing on the lees and - as its name implies - in its recent disgorging. First created in the early 1960's, R.D. is the outcome of research developed by the House of Bollinger on the ageing of champagne on its lees.
