The champagne of James Bond (the movie version) never disappoints. Full bodied, generous, with gorgeous mousse. Works with food or canapés. It's the BMW of champagne - reliable, sexy, luxurious with perfection in the detail.

Limes, lemon and ginger on the nose. Very acidic attack, with a powerful mousse of bubbles. Nice quince flavors with a clean soft biscuit note. Soft finish on gentle sugars which give it honeysuckle hint. Tasted at Tengley Oaks. 1 million magnums of this are in the cellars, some of this wine is barrel aged, which is rare for a Champagne of this level. 60% pinot noir lends acidity to this big, bold chamapagne.

Champagne as good as it gets. Bond. James Bond loves it too. And so far it's the best thing I ever tasted. Looks like Gold and is rather affordable. My best friend has a 2000 vintage waiting for a special day to celebrate life and live it. Long Finish

Exudes honey, with richness and a supple texture. Peach, biscuit and dried orange peel notes add complexity, and the wine glides to a long, lingering aftertaste of honey and brioche. Bolly Sweetie? An AbFab Favourite! Pinot noir dominates this classic Champagne, that is rich and intense on the nose and palate, and has a long, satisfying finish. A true gem amongst Kings. The grapes mainly come from grands and premier crus in Champagne. Two thirds of the grapes come from Bollinger's own vineyards which guarantees consistency in the quality of its wines. 30 crus of the Departement of the Marne have a part in the composition of the blends, 80% of the grapes coming from premiers and grands crus of the Montagne de Reims and of the Cote des Blancs. These are mainly from A, Verzenay, Louvois, Mesnil s/Oger and Cuis. Grapes: 60% Pinot Noir, 25% Chardonnay, 15 % Pinot Meunier Dosage: 7 to 9 grams per liter of unfermented residual sugar Vinification: After blending, bottling and second fermentation, the Special Cuvée will rest for a minimum of three years on its lees. This ageing process is far longer than the minimum requirements of the Champagne Appellation. It gives the wines the necessary time to achieve balance and allows for the aromas to fully develop. Rest: The Special Cuvée will rest for three months in the cellar after disgorging and before shipping. This is the necessary time for the wine to assimilate the "liqueur d'expidedition" and to recover suitable balance for tasting.

Bollinger's entire know-how is revealed in its ability to recreate a blend that is consistant, year after year, in style and quality, and to recompose this bouquet of aromas, this unique combination of body, balance, vinosity and finesse. It is on this wine that the House bases its difference, maked its qualitative choices and means to be judged. The first fermentation of the wines takes place in small stainless steel vats or oak casks. Some thirty crus from the Marne deparmentement go into it's composition, including a large proportion (80% minimum) of Grands crus and Premiers crus. The blend relies especially on Pinot Noir (on average: 60%). In order to preserve consistancy, 5 - 10% of reserve wines kept for five to ten years in magnums stopped with cork, go into the composition of the blend. The wine is aged in the cellar for a minimum of three years prior to disgorgement and a further 3 month before it is shipped.

Yeasty and layered with streaks of citrus and stone, saturated with fresh bread-dough scents and bursting with fresh fruit, it hits the palate like a middle linebacker and holds it in a bulldog?s grip. Flavor flavor flavor, through a confident, exceptionally long finish.
