Pedro Ximenez is a dessert wine like no other. The style of sherry and the grape used to make the sherry are of the same name. This is a sweet, intensely concentrated dark sherry, perfect for sipping after dinner. The sweet wine Pedro Ximenez is receiving quite a bit of attention lately. These almost black-colored ropy and intense sweet wines, better known as PX, are challenging sweet wines like Banyuls to an ideal pairing with chocolate desserts, blue cheeses and even with ice cream and raisins. Many people think PX is only a sherry wine from Jerez, but that’s not completely correct. What many people don’t know is that the bodegas in the sherry region use the young, sweet PX from Montilla Moriles as a base in their solera systems in Jerez. The wine law says that D.O. Jerez and D.O. Málaga can buy sweet wines from Montilla Moriles to make their own wines.

Our cellar Bodegas Tradicion is among the other cellars of the Appellation of Origin Jerez – Xèrés – Sherry, the only one committed exclusively to the production of the oldest Sherries qualified by the Regulatory Board. All types of Sherry that we produce have been classified by the Guarantee of Origin Regulatory Board as V.O.S. – very old sherry or vinum optimum signatum – a wine which has been aged for more than 20 years, or V.O.R.S.– very old rare sherry vinum optimum rare signatum – a wine which has been aged for more than 30 years. Our cellar was built during the 19th century, and it is located in the historical district of Jerez, inside the area which was the walled city at the times of the Muslim Empire. With small windows, thick walls, sand soil, high ceilings and barely illuminated, our cellar is an excellent example of the architectural tradition of the beginning of the 19th century. Located in the highest part of Jerez and facing south east, as many of the cellars in the area, our bodega receives the influence of predominant winds, as well as minimum exposure to sun light and maximum humidity which ease the conservation and evolution of our wines.
