Bodegas Santa Ana Cabernet Sauvignon la Mascota 2005
La Mascota comes from vineyards in Finca La Mascota, Cruz de Piedra, Maipú and Mendoza. The grapes are bunch selected for ripeness, and then hand harvested before destemming and gentle crushing. Fermentation and maceration takes place in stainless steel tanks for a minimum of 25 days at 23-25°C. Following natural malolactic fermentation, the wine is aged for 15 months in new French and American oak barrels. This wine has a deep red colour with hints of violet. Aromas of licorice, cassis and warm raspberry jam. The palate is full bodied, complex and long with an elegant touch of roasted pepper and chocolate. Ideal to combine with pastas, red meats or mature soft cheeses.
