Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

It's big, it's over ripe it's 15.5% alcohol. It's overpriced. Cough syrup aged in oak. Parker strikes again.

Compared favorably to El Nido El Nido 2005. Enjoyed both with dinner of prime rib. 2 of the 6 guests favored the Clio over the El Nido.
