Bodegas Callia at a Glance: Bodegas Callia was created with the goal of producing the best wines of San Juan and the best Shiraz of Argentina. Bodegas Callia crafts quality Argentine wines, while respecting and supporting the people, nature and community from which the wines are created. Bodegas Callia, a Winery in Harmony Among sand dunes, chañar trees and the occasional bristle of a prickly pear, Bodegas Callia lives in harmony with the Valley of Tulum landscape. The bodega, painted the colour of sand, melds so naturally with its surroundings that arriving at Bodegas Callia—like standing before a desert oasis—inspires the unexpected exhilaration of discovery. Visitors are welcomed at the main entrance to the winery by pircas, walls built from local stone laid by hand according to the Incan way. For this intricate work, Bodegas Callia enlisted the expertise of master stonemason Percy Cuellar. A Peruvian artist, Cuellar selected chunks of stone from a neighbouring blue quarry, cut them and brought them to life using the same techniques passed down from his ancestors. Landscaping respects the native vegetation. Shade-giving plants, aguaribays (pepper trees), poplars, eucalyptus and small bushes were planted around the winery. Palm trees from neighbouring estates were also planted. Every detail, including the parking structure—a simple overhang made with canes—was given painstaking consideration to preserve the local landscape. The great care with which the indigenous vegetation was planted and the stones surrounding the winery were laid is a reflection of Callia’s respect for nature and commitment to quality. This sensitivity is witnessed in the construction of the bodega itself and the well-crafted wines it produces. Bodegas Callia was not the first winery to rest in its place at the foot of the Pie de Palo. The original winery, built in the 1930s, was in need of extensive updating and earthquake retrofitting. Bodegas Callia—built with the world’s most advanced techniques for earthquake resistance—was designed to preserve the character and charm of the original structure, along with a new nave that houses 8,000 square meters of tanks with a capacity of 9,000,000 liters. The façade and second-story balcony of the old winery remains intact within the new facility. The entire winery, including the storage area, is temperature controlled at between 10 C and 15 C to ensure the highest quality wine. Stainless steel tanks in a variety of sizes are used for fermentation and storage. Smaller tanks, which are wider than they are tall, are used to increase skin to juice contact during fermentation, resulting in greater complexity in the wine. The naves that comprise the winery house two laboratories, a high-tech bottling line and stainless steel pumps that prevent oxygenation of the wine. While there are more than 100 wineries in San Juan, only a handful produce wines using the latest technology and on the scale of Bodegas Callia. “It’s not only our commitment to Shiraz that is unique,” says Enologist Fabian Miranda. “Our dedication to experimentation and quality is uncommon for wines at this price point.” Having devoted the last 12 years to winemaking in Mendoza and Salta, Miranda is confident that San Juan is capable of producing fruit-forward, good value wines and complex, character-rich Shiraz that rivals the world’s best examples. The new winery was outfitted with stainless steel tanks, modern pneumatic presses and a fractionation room. Bodegas Callia is home to 8,000 square meters of tanks with a capacity of 9,000,000 liters. The entire winery, including the storage area, is temperature controlled at between 10 C and 15 C to ensure the highest quality wine. Stainless steel tanks in a variety of sizes are used for fermentation and storage. The Wines of Bodegas Callia: Grand Callia This wine is made only when the harvest is exceptional. Shiraz is the basis of this blend, which is produced from the best grapes of the Pedernal Valley. The blend, which includes Shiraz, Malbec and Cabernet Sauvignon, varies according to the harvest. The wine is aged in French oak barrels of first use for one year, and then in bottle for a minimum of six months. Callia Magna There are four wines under the Callia Magna label: A Viognier, a Malbec and Merlot blend, a Tannat and a 100 percent Shiraz—aged for six to eight months in a combination of French and American oak barrels, this wine is further aged in bottle for three months before release. Callia Alta Reserve Callia Alta Reserve is a blend made of those quality grapes which perform best in San Juan. Red wine is based Shiraz with Bonarda and Cabernet Franc and has 3 months of oak aging. The refreshing white option is a blend of Chardonnay, Viognier and Pinot Grigio. Callia Alta At the heart of the Callia Alta wines is Shiraz. In addition to a single varietal Shiraz, Callia Alta includes four blends with the varietals that most complement the grape: Callia Alta Shiraz/Malbec, Callia Alta Shiraz/Bonarda, Callia Alta Shiraz/Tannat and Callia Alta Shiraz/Cabernet Sauvignon. These fruit-forward, well-structured wines receive a short oak aging. There are two refreshing whites under the Callia Alta label: Callia Alta Chardonnay and Callia Alta Pinot Grigio. Winemaking Team Fabian Miranda, Winemaker Manager Oscar Alberto Biondolillo, Winemaker consultant Alberto Antonini, Winemaker consultant Rodolfo Ernesto Perinetti, Agronomist Winemaking Grapes are harvested in the cool early morning hours and received at the winery in bins. The grapes are hand-sorted and then put into the destemmer/crusher. White Wine For white wine, the grapes are chilled and then go directly to the Bucher bladder press. The juice is gently extracted and the skin is removed by gravity. The juice is sent through refrigerated pipes and into stainless steel tanks. The wine receives 20 days fermentation in stainless steel, before it is taken off its lees, clarified and placed into tanks for four months of aging. Red Wine The process for red wine begins as it does for the white grapes. After the grapes are sorted and crushed, the juice goes to stainless steel tanks for five to eight days of fermentation at a higher temperature. Temperature and time is controlled depending on the type of wine. Fruiter style wines receive a long pre-fermentation at low temperatures and almost no post-fermentation, while the more complex wines receive almost no pre-fermentation and a long post-fermentation, before going to barrel. The Tasting Rooms at Bodegas Callia Bodegas Callia houses two tasting rooms: one for tourism and one for trade, press or private functions. The tourism tasting room stands within the original winery structure. Callia’s private tasting room is located one floor below, in what was the crushing area for the original winery. Its walls are painted with red wine and a large travertine marble table anchors the room. Bodegas Callia welcomes visitors from all around the world. Bodegas Callia crafts Shiraz in a variety of styles. Some are young and fruity with rich red colour, while others are intensely flavourful, complex and ideal for ageing. The winery also blends Shiraz with Malbec, Bonarda, Cabernet Sauvignon and other varietals. Grand Callia This wine is made only when the harvest is exceptional. The 2011 Callia Alta Malbec contains 30% of the crop aged in French and American staves. It has a well-defined bouquet of raspberry and strawberry fruit, with those oak staves lending it just the right amount of lift. The palate is medium-bodied with chunky red berry fruit and a simple but joyful, plump finish. This is a great easy-drinking wine. Drink now.

Subtle and fairly deep, with aromas of berry, pastry and cherry cough drop. It feels lively and good, with blueberry and plum flavors in front of a textured, medium-deep finish.
