Food Pairings for Bles Vino Ecologico Crianza
The fruit is sourced from our old Monastrell and Bobal non irrigated bush vines and our younger Cabernet Sauvignon on irrigated double cordon. Bushes were hand harvested from October 1st. for the Monastrell. Trellised vines were machine harvested from October 20th. Colour: intensive ripe cherry red. Nose: chocolate and balsamic fragrance, very distinctive, enhance by the violets of the Cabernet Sauvignon. Palate: medium tannic structure, fresh cherry and citric notes.. Blend: 80% Monastrell, 20% Cabernet Sauvignon. Oak treatment: 3 months in second to fourth Hungarian oak. Drink: within in the next three years as a welcoming glass or with medium to light meals. P.S. Bles is a name given to an indigenous plant whose growth is encouraged between rows of our vines in the valley. Organic viticulture trusts nature's own balance.
