Cellar The cellar technique equipment of the production site in Jois, completed in 2004, ranks among the most modern in Europe. The computerized cellar secures hygienic and safe production measures which meet highest quality standards. Fermentation of the selected grape material takes place in computer-controlled stainless steel tanks. These fermentation vessels used in the Hillinger winery are jacketed tanks allowing cool fermentation and maturation of the wine due to refrigerating coils between the two walls – a fact which plays an important role in white wine production. Furthermore the stainless steel tanks guarantee a production according to highest hygienic guide lines as well as a controlled fermentation due to exact temperature regulation. Especially fresh fruity wines like Welschriesling, Riesling, Sauvignon blanc and light red wines are vinificated in stainless steel tanks. The barrique-barrels of the Hillinger Winery are exclusively made of finest French holly oak wood (Allier and Tronçais oak). The sweet, spicy tannin of the wood favourably supports the wine flavours. With regard to white wine, barrique barrels are predominantly used for fermentation while with red wines only maturation takes place in barriques. The classic barrique holds 225 litres and in most cases is only filled twice to guarantee top quality. Vineyards Since 1990 when Leo Hillinger took over the small wine retail business from his father, he has continuously implemented intelligent structural reforms as well as acquired excellent single vineyards around Jois, Oggau and Rust resulting in one of Austria’s top wineries. Meanwhile the area under cultivation extends over 46 hectares. The most precious site comprises 20 hectares in Rust where the grapes for Hillingers top wines, the award winning HILL series, are grown. In Hungary, the famous wine region Mátrai Borvidék near Eger, northeast of Budapest, is the line Hungaro HILL created. There, the good soils together with the sunny climate produce intensive powerful wines. The Hillinger Winery counts itself among the largest of Austria’s top-quality wine producers. Read less

Die Cuvée präsentiert sich in einem kräftigen Rubinrot mit schwarzem Kern. Die Rebsorte Syrah als Hauptteil bringt die Würze und Raffinesse, dies wird abgerundet durch die Geschmeidigkeit des Zweigelt und die Fruchtigkeit des Merlot. Der dezente Holzeinsatz unterstützt die Frucht und trägt zu der kräftigen Tanninstruktur bei. Langes Finish und ebenso langes Potential.

Dunkles Ziegelrot. Im Duft geprägt durch Noten von roter Frucht und Rauch, Speck, erinnert dadurch etwas an Pinot Noir. Füllige, weiche Struktur mit dezentem Gerbstoff und milder Säure. Wieder viel rotbeerige und rauchige Noten im Abgang.

Dunkle, frische Beeren im Bouquet mit etwas Schokolade. Am Gaumen viel Frucht, weich mit geschmeidiger Tanninstruktur. Feine Balance und sehr harmonisch.
