Winemaker's Notes:

Percentage Grape: 100 % Shiraz<br/><br/>Growing Climate: Vine age: 10 years. Vine density: 3.500 vines per hectare. Vine density: planted 1.30 m apart so that vines compete for nutrients. Yield: 8 tons per hectare. Intensive leaf and shoot management in October allows for even ripeness and fruit concentration.<br/><br/>Type of Harvest: Grapes picked at 26 degrees Brix.<br/><br/>Vinification Method: Two weeks skin contact in open fermenters with skins and juice mixed daily. Using only dry yeast, fermentation occurred over two weeks. After fermentation skins pressed at 1.2 bars. Matured for 15 months in new and second fill French and American oak barrels.<br/><br/>Age of Barrel: 70% 1st fill, 30% 2nd fill<br/><br/>Type of Wood: 85% French & 15% American oak barrels<br/><br/>Extract: 2.10 g/l<br/><br/>Alcohol Percentage: 14.5 %<br/><br/>PH: 3.63<br/><br/>Aging Time: 15 months<br/><br/>Sugar Rate: 0-5 g/l<br/><br/>Total Acidity: 6.02 g/l<br/><br/>Cork Material: natural cork
