What to Expect

Champagne is specifically a sparkling wine made in the Champagne region of France; every other sparkling is simply that, sparkling wine. Made to be aged for a few to many years, in many languages "Champagne" is synonymous with "party". When young, Champagne exhibits the fresh fruit tones of its "cepage", or blend. Usually based on a blend the features either Chardonnay or Pinot Noir as its main ingredient, Champagne's fruit can range from citrusy to orchard fruits and even red berries. The wine gains distinct yeasty notes from its secondary fermentation, the one that adds the fizz, which is typically described as recalling brioche or bread. As it ages Champagne tends to lose its obvious fruit, which is replaced by subtle nutty tones and subdued elements of dried fruits.

A romantic Champagne... First loved by women, its balance and its delicacy have made it a revered wine appreciated by everyone.

The production secrets and the vinification method of this cuvee go back to the origins of the House of Billecart-Salmon and have been handed down for seven generations. The Brut Rose is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as white wine with a small percentage of Pinot Noir vinified as wine.

Its pale pink colour is adorned with warm glints of gold, and its delicate, slowly rising bubbles gives it a persistent mousse.

A coiled spring of a Champagne, with its berry and bread dough notes locked up in the structure. This needs time or food to mellow and reveal its charms. Rating: 16/20 - As reviewed by Jancis Robinson Very pale brick. Rather raw nose and the dosage seems a bit clumsy. Big and bold and beefy rather than subtle. Too sweet! I was surprised that this didn't show better. Billecart's Cuvée Elisabeth Salmon 1998 is stunning.

Champagne Billecart-Salmon was founded in 1818, with the marriage of Nicholas Francois Billecart and Elisabeth Salmon, and is run today by their descendent, Francois Rolland-Billecart. The firm owns 74 acres of vines, and buys in grapes from another 346 acres.
