Bigi Orvieto Classico Secco Italy Umbria Orvieto White 2009
The grapes were harvested in late September through early October. Criomaceration occurred over a span of 8-9 hours, followed by static decanting of the musts for 24 hours in stainless steel tanks at 12-18°C. Alcoholic fermentation took place at temperatures of 15-17°C over a period of 10-12 days in stainless steel tanks. Prior to bottling, the wine was aged for 3 months then filtered, fined, and refrigerated.
