Food Pairings for Beringer Cabernet Sauvignon Private Reserve
Wonderful earthy cab with notes of oak and cedar. Shows that Beringer can make a cab with a sense of place and time and not just cookie cutter. Nice fine herbs and black fruit are more Bordeaux like than Napa Cab.
I tasted this wine on June 19, 2007. My notes were very sparse, but here goes: Intriguing nose of oak, dark chocolate, and plum. Tannins were mellowing, slight leather, light mouthfeel, long finish, but not silky smooth.
bold and full bodied
Beringer is well-known for middle of the road wines. The Private Reserve is one of the best Cabs around. I really like the 2003 and know it has lot of time left.

Cabernet Sauvignon Napa exhibits more cassis, earth, and tobacco characteristics than the Knight's Valley as well as a deeper style, good purity and richness, and medium to full body. Again, the overall impression is one of softness with enough wood to provide a pleasant spicy note.

"14.1% 1 bottle 3/11/07 92 pts Wine Advocate. Dark Ruby color accompanied by a big, sweet nose of smoked meats, black currant jam, chocolate, pain grille, and espresso roast. Rich full-bodied, and deep with silky tannin and loads of length & concentration, it should drink well for 15-20 years." Vinifying the fruit from each vineyard separately, Ed Sbragia and his winemaking partner Laurie Hook used gentle pump-over techniques for optimal extraction, and then aged the wines in hand-selected, custom-toasted barrels of new French Nevers oak. The wines went through 100% malolactic fermentation for added complexity and softness, and were aged just over two years before Ed selected the Cabernet Sauvignon blend from seven different single-vineyards - 32% St. Helena Home Ranch, 19% Steinhauer Ranch, 12% Marston Vineyard, 12% Bancroft Ranch, 8% Quarry Vineyard, 6% Rancho del Oso, and 6% Chabot. Also added to the blend is a touch of Cabernet Franc (5%) from Bancroft and Steinhauer Ranches.
