Beringer Cabernet Sauvignon Knights Valley 2012
"The 2012 Knights Valley Cabernet Sauvignon has aromas of ripe blueberry, blackberry, maple and nutmeg. Notes of currants, sassafras, and bright red fruits emerge from a dense core of fruit, accented by juicy acidity and a pretty finish. Located 17 miles northwest of the winery, Knights Valley vineyard is approximately 600 acres, and has rocky, well-drained soils that are perfectly suited to Cabernet Sauvignon, Sauvignon Blanc, Semillon, Merlot, Cabernet Franc and Petit Verdot. To maintain the unique characteristics of the different lots from varying areas of the vineyard, Chief Winemaker Laurie Hook monitored each of the lots carefully through vinification and aging. Extended maceration created larger tannins to enhance the lush mouthfeel of the blend and extracted a maximum of color, aromas and flavors. The wines were then aged in small French Nevers oak barrels (28% new) for thirteen months and underwent malolactic fermentation for further development of texture and mouthfeel." -Winery

The 2012 Knights Valley Cabernet Sauvignon has aromas of dark blue fruits and spices. Notes of cassis, sweet licorice and a juicy core of fruit are balanced by nice acidity and a silky, lingering finish. To maintain the unique characteristics of the different lots from varying areas of the vineyard, Chief Winemaker Laurie Hook monitored each of the lots through vinification and aging. The wines were then aged in a combination of seasoned oak barrels with a small amount of new oak for 17 months to both round and soften the tannins and bring in some additional spice notes. The foundation of the Waymaker is Syrah, a varietal that demonstrates great richness and generosity from Camatta Hills. Cabernet Sauvignon comprises the majority of the balance of the blend, and lends great depth of fruit as well as lifted spice notes. Laurie blended in a portion of Petite Sirah for its aromatics and rich, inky color. - Winery
Easy to approach yet deceptively complex, with ripe red and dark berry, floral and peppery spice notes. The creamy, supple texture invites drinking. Drink now through 2023.
The 2012 Cabernet Sauvignon Knights Valley is especially deep and powerful in this vintage. Smoke, game, incense, leather, pomegranate, spice and red cherries are some of the many notes that inform this striking Cabernet from Sonoma’s Knights Valley, a fertile hunting ground for savory, mineral-driven wines full of character. This is a fabulous wine for the money, but with a production of 90,000 cases, winemaker Laurie Hook shows to achieve quality and value with scale, something that is much harder than it looks.
