My favorite little wine shop down the street carries only two sparkling. This happens to be one of them, for good reason. It's drier than your average Prosecco with notes of apple and pear. A staple.

There is no better summer/party wine to be had. My lady and I call it "Italian champagne". Drink it in a Reidel flute "headache" cold. I am told it is a single fermentation Prosecco. Whatever, for the price and quality there is nothing better, especially at the holidays. With seafood: "FUGETABOUTIT" Excellent with Turkey at thanksgiving or Christmas. Beware the cork, it could kill someone twenty feet away, it is hugh!! I keep at least 10 cases in my wine cellar, the gold sleeves covering the corks look great in my bulk bins. Great to bring to dinner parties or give as xmas cheer. Bubbles that look like your ready to put the pasta in. They never stop

Bele Casel is a small, artisanal winery which makes its Prosecco with fruit grown in the subdistricts of Santo Stefano and Sacol, largely considered the best source of Prosecco in the Valdobbiadene region. Extra dry. 87 points Fine Wine Review: "I continue to search in the U.S. for the charming, insouciant, slightly sweet, low alcohol Prosecco that I have become accustomed to in Italy... this is the closest I have come to the holy grail. This wine is offdry with both the austerity of a fine sparkling wine and the pear fruit of Prosecco, and the slightest bit of creaminess in texture. (Issue #118; 2007)"
