Baron Herzog Chenin Blanc North Coast 2009
These Chenin Blanc grapes were harvested at night when cold (55 F) and immediately delivered to the winery for pressing. Chilled overnight (38 F) and racked to fermenter. The wine was fermeted at low temperatures (50 F - 55 F) for three weeks to enhance the aromatic peach and apple components while maintainng a bright acid balance.
