"On the hills in the provinces of Modena, Grasparossa di Castelvetro is one of the four existing Lambrusco Denominazioni di Origine Controllata. Still holding the rustic appeal, Lambrusco has an extremely noble background. The wild vine ‘labrusca’ was known to the Etruscans and recommended by the Romans for its supposed therapeutic effects. It's not easy to determine which came first, Modenese traditional cuisine or Lambrusco. Prosciutto and Parmigiano (Parma is just 45 minutes away), tortellini, pasta with red sauce and a whole spectrum of meat - from boiled to sausages - all marry perfectly with Lambrusco. Red with violet highlights, lively with an evanescent sparkle, it has a particularly pronounced fruit bouquet for Lambrusco. Its considerable tannic structure making it a perfect pairing with food. <p> <p>This is a Sparkling red wine from Emiglia-Romagna region The grapes, of the Lambrusco Grasprarossa variety, are from Barbolini vineyard, &nbsp;a couple of miles southwest of Modena. A base wine is made and three or four times a year, some of it is drawn off and pressurized in tank to add sparkle and then bottled with a Champagne-like cork. The wine is purple-black in appearance.</p> </p>
