Our Philosophy is to produce wines whose characteristics faithfully represent that variety of provenance, as well as their terroir, but in which the hints of wood are never underscored; that they be rich, highly elegant and never nauseous wines. The wine brings with it a precious baggage of qualitative features, which derive from the grape variety and the terroir of provenance: we are fully committed to ensuring that all said characteristics remain integral and do not diminish or undergo modifications, thus we limit our actions to those strictly necessary, using delicate procedures, aware that every clarification, filtration or other intervention subtracts a part of the wine's qualitative characteristics. Pressing is carried out by means of soft presses so as not to tear the skins; fermentation comes about exclusively at controlled temperatures programmed for each wine, so as to preserve the precious perfumes and original flavours; the extraction of the anthocyans and polyphenols from black grapes is done by means of a very delicate system involving automatic rotary sprinklers that shower must onto the skins. As for our white wines, among the most innovative actions, we would mention the one adopted for Gavi: cold maceratyion of a part of the cortese grapes before pressing, so as to favour a more marked and delicate extraction of their perfumes. As regards red wines, of great importance for us is the choice of wood, capacity and age of the barrels used, all of which in French oak. We use oak tuns for the fermentation of our highly prized reds and barrels of different sizes for their refinement. For instance: 225-litre barrels for Montemareto and in part for La Court Barbera d'Asti (of which 50% is instead refined in fermentation tuns); 700-litre barrels for the Barolo and Barbaresco crus; 5000-litre barrels for Barbera d'Asti Cipressi della Court, Le Orme, classic Barolo and Barbaresco. All our top-rank reds (Barolo, Barbaresco and relative crus, Barbera d'Asti La Court , Montemareto) are bottled without having previously undergone filtration, so as to maintain integral both their original wealth of bouquet and taste. The “long-life” reds undergo lengthy and adequate refinement in the bottle, away from the light, at a constant temperature of 14- 16°C so as to enable them slowly to develop heady fragrances and to deliciously harmonise their flavours. It is precisely in this stage that the greatness of a wine comes to the fore: thus we delay putting our crus of red wines on sale until after the deadline foreseen by the individual Production Regulations, so that they may arrive on the wine-lover's table ready to be appreciated to the utmost. candied, candied medicinal, quinine, a bit chinato, quite intense and a bit peppery, a bit raw woody, flat, stripped, big but without any flesh, dark anonymous flavors, dark fruit on the back end, lots of spicy wood tannins, hot, red hots, cinnamon spicy extracted, hot

The nose showed round red berries, undergrowth and earth. On the palate it showed good balance with focused red fruits. It finished with strong tannin. I could see this drinking beautifully in three-to-five years.

The nose showed tart cherry, mint, cinnamon and mocha. On the palate, I found lush red fruit that was quickly swallowed up by a wall of tannic structure. It’s hard to glimpse what the future will hold for this wine. I would give it another three-to-five years before checking in again.

The nose showed tart red fruits with aromatic herbs and a hint of fresh turned earth. On the palate, I found intense, saturating red fruit with gripping young tannins fighting for supremacy. The finish was long and showed an amazing concentration of fruit.

The nose showed an intense perfume of wild berries, plum skin and flowers with spice box. On the palate, it was beautifully balanced with tart red fruit, tobacco and earth. The finish was staying with well-integrated tannin. This bottle is enjoyable now and should be even better in a few years time.

Garnet red with tawny highlights, the wine has licorice and spice aromas and flavors on an elegant full body with the firm tannins typical of this vineyard.

Colour: Garnet red with tawny highlights. Aroma: Complex, refined and ethereal, reminiscent of green peppercorns, spices and bitter almonds. Taste: Ample, elegant and aristocratic. Parings: Game, grilled and roasted meat, fine aged cheeses.

The wine is garnet red in color, with orange highlights that become slightly amber with age. Full, dry, austere and rather harsh when very young, this superb Barolo becomes rich and velvety with age, very harmonious and elegant. It exhibits a distinct bouquet of violets or rose petals, with seductively earthy, slightly musky undertones.

The 2007 Barolo Tortoniano is quite bold and powerful in this vintage. It reveals surprising muscle to match its dark red fruit, flowers and spices. As always, the Tortoniano shows the more perfumed, feminine side of Barolo, but the 2007 has an extra level of richness and body. This is a gorgeous, overachieving wine in its category. Anticipated maturity: 2012-2022. Moderately saturated bright medium red. Raspberry, marzipan and sweet oak on the nose. Creamier and denser than the Barbaresco, with good vinosity and a restrained sweetness to its redcurrant and red plum flavors. A bit clenched and dry on the end, but theres solid material here to support the dusty tannins.

A bit shy on the nose, yet this is lush and almost opulent, boasting pure cherry character that shows touches of licorice and leather. Theres a steely base of tannins that keeps this focused and long on the finish. Best from 2015 through 2032. 18 cases imported. -BS The 2007 Barolo Cerequio is the freshest and most vibrant of these 2007 Baroli. Sweet dark cherries, menthol, pine, mocha and spices are some of the notes that are woven together in this rich, textured Barolo. Here, too, the balance of fruit and structure is terrific. Anticipated maturity: 2017-2027. Michele Chiarlo's Cerequio is one of the important wines that defines Barolo, past and present. This historic bottle offers consistency and longevity thanks to its aromas of spice, cola, red fruit, cigar box and licorice.
