Pleasant wine, but seemed a bit weak on both the nose and the palate. Smooth tannins and relatively low acidity.

Dunkles Purpurrot; dicht und verführerisch. In der Nase ein fein abgestimmtes Brombeer- und Pflaumenkonfitürebouquet, untermalt von dezenten Lakritze- und Tabaknoten. Im Gaumen fruchtbetont, schmeichelnd, perfekt ausbalancierte Säure, und dichte, samtige Tannine. Der Abgang zeigt sich langanhaltend und ausgewogen. Ein Wein mit gutem Alterungspotenzial.

Castello Banfi Cum Laude DOC 2006: Ausbildung beendet mit "Cum laude". Die Fachwelt bejubelt eine Topleistung. Viel zu bescheiden kommt diese Cuvée daher.In äußerst dichtes Rubinrot gehüllt, offeriert der Wein ein komplexes Bukett, welches an Brombeeren, Pflaumenkonfitüre und eingelegte Kirschen erinnert, dazu kommen Lakritze, schwarze Oliven und Tabak. Im Geschmack wirkt er vollmundig, zeigt sich ausdrucksstark mit einer dichten und doch seidigen Tanninstruktur. Dieser Wein passt ausgezeichnet zu Hülsenfrüchtesuppen, der toskanischen Ribollita, gegrilltem Fleisch und mittelreifem Käse.Die bei diesem Wein verwendeten 4 Rebsorten werden einzeln mit einer kalten Vormaischegärung bei 14°C für 2 Tage gekeltert. Anschließend folgt eine Maischegärung bei 22°C bis zu den letzten 2 Tagen der alkoholischen Gärung, während denen die Temperatur auf 27°C erhöht wird. Nach der alkoholischen Gärung werden die Weine, getrennt, in Barriques umgefüllt, wo der biologische Säureabbau stattfindet. Der Ausbau dauert ungefähr 6 Monate. Erst jetzt erfolgt der Verschnitt.
