Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

This is transparent ruby in color and scented with cocoa and dates. The rich tannins balance a touch of sweetness with light umami notes. It’s balanced in the direction of braised beef.

The 2010 Rosso di Montalcino flows across the palate with layers of lush, expressive fruit. The wine’s minerality comes through on the mid-palate and finish. I very much like the combination of rich fruit and freshness in this lush, textured Rosso. Banfi aged the Rosso in a combination of French oak barrels and casks. Anticipated maturity: 2012–2016.

Winemaker's Notes:

Ruby red in color. The aromas are fruity with notes of plum, blackberry, violet and a delicate hint of licorice. On the palate, the important structure is immediately perceived; it is round and vigorous, with a pleasant finish and an amazing persistence.
