Though mostly famed for its use in the classic wine cocktail with creme de cassis Aligote (the other white Burgundy) is also capable of producing lovely crisp and light-bodied whites the best of which can be favorably compared to Chablis. Great for summertime sipping the Ballot Millot is zesty and inviting with lemon-lime green apple and lychee notes. Terrific as an aperitif it also works well with fresh salads light fish dishes or sushi.
