Getting the pretty coral color exactly right is one of the most enjoyable aspects of making this rose. Each lot is individually monitored as it reaches optimal color and flavor composition (10 to 24 hours of skin contact.) When that level is reached, the juice is removed from the skins to prevent further color development and maintain the fresh fruit.
RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

The beautiful bright coral color of this unique rose of Pinot Noir sets the tone for everything that follows. Theres an abundance of pretty aromas, but dont let that trick you into thinking this is going to be sweet. Its bone dry with bright flavors, a subtle texture and crisp acidity that makes it a perfect summertime wine. On the nose, theres fragrant strawberry, apricot and a subtle honey- suckle and citrusy orange peel perfume. In the mouth, its fresh and bright with key lime, Bing cherries and a nice touch of minerality. Its incredible to pack so many big flavors into such a restrained and elegant wine. Because of its balance, this wine is versatile with food and will pair with most everything from sushi to salmon and barbecued pork tenderloin. Of course, its pretty good all by itself and can serve as that perfect aperitif.
